
Are you looking for a birthday cake idea? here is an easy birthday cake recipe with fruits. A fast and delicious fruitcake! 🙂Â
Ingredients:
For the sponge cake base:
- 7 eggs
- 7 tablespoons of flour
- 7 tablespoons of sugar
- 16 g baking powder
- a bit of lemon juice
- vanilla & rhum flavour
For the mascarpone cream:
- 4 eggs
- 250 g sugar
- 500 g mascarpone
- vanilla flavour

As you can see in the photo above, we made this fruitcake to celebrate the first month of Davide’s life 🙂Â
But the recipe is so easy and fast to make that you don’t need a special occasion, you can make it on a Friday evening to celebrate the end of a working week for example.
Let’s keep it between us, but it’s so delicious that sometimes I invent reasons to celebrate in order to make it 😀Â
Steps to follow:
- Start making the sponge cake base so: separate the eggs
- Mix well the egg whites until they transform into a solid cream (my tip for a successful whites cream is to add a bit of salt at the beginning and some sugar while mixing them)
- Mix the yolks as well with the sugar, stop when the sugar is completely melted
- Add one tablespoon of flour at a time in the yolks cream while slowly mixingÂ
- Add the baking powder as well and on top of it a bit of lemon juice
- Mix all together and add vanilla flavour if you like it
- Slowly incorporate also the whites using a spatula
- Transfer the resulted composition into a cooking tray & put it in the oven at 160° celsius for 10 minutes or until ready
- When ready divide it in half and to make it even more delicious, make a syrup out of water, rhum and a bit of sugar and slowly pour it on top of the cake base, with a tablespoon
- Now let’s make the mascarpone cream: separate again the eggs
- Mix well the whites
- Mix also the yolks with the sugar and vanilla flavour
- Add the mascarpone and continue mixing
- Gently incorporate the whites into the resulting cream, using a spatula
- The cream is ready! add it in the middle of the cake and on top
- Add also your favorite fruits, mine are strawberries and kiwi.
