The pasta e fagioli recipe is a fast & easy italian dish, yet very delicious in its simplicity.
You’ll just need: olive oil, beans, onions, carrots, celery, tomatoes sauce, broth (or just water), pasta and parmesan.
If you want to use fresh beans than you have to put them in a bowl with water for at least 12 hours. Then you want to boil them until well cooked (usually 1 hour and a half).
But if you don’t want to complicate yourself, beans pre cooked are fine as well.. 🙂
So let’s cook the onion in a pan with some olive oil. Once well cooked (after approx. 5 minutes), we’d add the celery, carrots (previously cut in small equal pieces) and beans.
We’ll let these ingredients for 5-10 minutes to cook together.
After that we’ll add some hot broth (vegetable or meat based, in case not available, we can add hot water or the water from the beans). The broth quantity is small, around 200 ml. , just enough to cover the vegetables.
We’ll let them slowly cook until ready, that must take around 15-20 minutes. After that we’ll add the tomato sauce.
In the meantime we put water to boil, in another pot to cook the pasta.
Once the water starts boiling, we’ll add sea salt, a bit of olive oil, mix well and then the pasta.
We’ll let it cook for half of the time mentioned on the box and then we’ll add it to the vegetables.
The vegetables must be already cooked by this time, so we’ll take a quarter of them and mix it well to create that cream effect. Once well smashed we’ll add it again in the pot.
Now it’s time to add also the pasta, and slowly cook it together with the vegetables.
Add some more water (broth or just the water in which the pasta boiled, you choose) in order to help the pasta cook well.
In about 5-10 minutes, everything should be well cooked and in a great symbiosis.
Don’t forget to add salt, pepper and other spices you might like, such as garlic powder, sweet chilly etc.
Be sure to have this creamy effect as in the video down below, before serving it.
I suggest you to serve it as a first dish with some parmesan on top.
