
We love cheesecake and that’s why I wanted a fast & easy cheesecake recipe to make it at the comfort of our home, whenever we crave it 🙂
This recipe is great as you need less than 30 minutes to prepare it and no baking is involved, got your attention? try it and fell in love..Â
Ingredients for a 28 cm cooking tray:
- 400 g ricotta
- 400 g philadephia cheese
- 400 g liquid whipping cream
- 300 g sugar
- 10 g gelatin
- 150 g butter
- 400 g digestive wheat biscuits
- vanilla flavour

Steps to follow:
1. Start with the biscuits and smash them very wellÂ
2. Once the biscuits were turned into “powder” biscuits, take the butter, heat it so that it becomes liquid and mix the butter together with the biscuits powder
3. Put this composition on the cooking tray and with the bottom of a water glass or other kitchen tool, put some pressure on the biscuits trying to form the bottom layer of the cheesecake
4. Put the gelatin in a bowl of cold water to soften it, it takes approx. 10 minutes
5. Now let’s prepare the cream, add in a bowl the ricotta, philadelphia and the sugar and mix them together until the sugar is dissolved
6. In a cooking pot add 200 ml of the whipping cream and let it boil for approx 1 min
7. Now add the gelatin in the hot whipping cream and mix with a spoon to dissolve it
8. Once dissolved, add the whipping cream with the gelatin and the other 200 ml of cold whipping cream to the cheesecake composition from the 5th step and mix them well together for approx. 5 minutes
9. Add the cheesecake composition in the cooking tray and let it rest in the fridge for at least 5 hours
10. Serve it with the favorite topping and fruits!
