Easy birthday cake recipe with fruits

Are you looking for a birthday cake idea? here is an easy birthday cake recipe with fruits. A fast and delicious fruitcake! 🙂 

Ingredients:

For the sponge cake base:

  • 7 eggs
  • 7 tablespoons of flour
  • 7 tablespoons of sugar
  • 16 g baking powder
  • a bit of lemon juice
  • vanilla & rhum flavour

For the mascarpone cream:

  • 4 eggs
  • 250 g sugar
  • 500 g mascarpone
  • vanilla flavour

As you can see in the photo above, we made this fruitcake to celebrate the first month of Davide’s life 🙂 

But the recipe is so easy and fast to make that you don’t need a special occasion, you can make it on a Friday evening to celebrate the end of a working week for example.

Let’s keep it between us, but it’s so delicious that sometimes I invent reasons to celebrate in order to make it 😀 

Steps to follow:

  1. Start making the sponge cake base so: separate the eggs
  2. Mix well the egg whites until they transform into a solid cream (my tip for a successful whites cream is to add a bit of salt at the beginning and some sugar while mixing them)
  3. Mix the yolks as well with the sugar, stop when the sugar is completely melted
  4. Add one tablespoon of flour at a time in the yolks cream while slowly mixing 
  5. Add the baking powder as well and on top of it a bit of lemon juice
  6. Mix all together and add vanilla flavour if you like it
  7. Slowly incorporate also the whites using a spatula
  8. Transfer the resulted composition into a cooking tray & put it in the oven at 160° celsius for 10 minutes or until ready
  9. When ready divide it in half and to make it even more delicious, make a syrup out of water, rhum and a bit of sugar and slowly pour it on top of the cake base, with a tablespoon
  10. Now let’s make the mascarpone cream: separate again the eggs
  11. Mix well the whites
  12. Mix also the yolks with the sugar and vanilla flavour
  13. Add the mascarpone and continue mixing
  14. Gently incorporate the whites into the resulting cream, using a spatula
  15. The cream is ready! add it in the middle of the cake and on top
  16. Add also your favorite fruits, mine are strawberries and kiwi.
  17. Enjoy!
